To make the cake batter, mix powdered sugar, oil, all purpose flour, baking soda, baking powder, salt, milk and vanilla essence. You can pour it in the mould once smooth batter forms. The cake can be baked in a pressure cooker over sand or in an oven. It is the perfect accompaniment with a cup of coffee!

Moist Chocolate Cake


Combine all-purpose-flour, cocoa powder, baking powder, baking soda and salt. In a separate bowl mix sugar, coconut oil, yogurt, milk, vinegar, vanilla essence and coffee decoction. Slowly add the mixture of dry ingredients to this and whisk to form a smooth batter. Pour the batter in greased mould and bake it at 180℃ for 35 minutes. To make the cake moist, you can use a mixture of chocolate, whipped cream and honey for frosting!

Whole Wheat Strawberry Cake


Health freaks this one's for you! Start off by adding baking soda to homemade curd. Mix castor sugar and vegetable oil and add the curd mix to it. Add vanilla extract, whole wheat flour, baking powder, milk and lemon juice to make a smooth batter. Pour the batter in the mould and layer with fresh sliced strawberries. Bake the cake at 180℃ for 30 minutes. Nutrition of whole wheat and freshness of strawberries, does it get better than this?

Red Velvet Cake


Start off by mixing butter, condensed milk, warm milk, vanilla extract, red food colour, vinegar, maida, baking soda, baking powder and cocoa powder to make a smooth cake batter. Bake the cake at 180℃ for 40 minutes. To make the frosting, whip cream cheese, butter and vanilla extract till you get stiff peaks. Layer the cake with cream cheese frosting and serve!

Pineapple Upside Down Cake


To make this classic recipe in its eggless version, start by melting butter in a pan along with brown sugar, and layer this mixture at the bottom of the cake mould. Top this with pineapple slices and cherries. To make the batter, mix oil, sugar, milk, vinegar, pineapple essence, maida, baking powder and baking soda and fold well to make a smooth batter. Pour this batter in the mould over the pineapple slices and bake at 180℃ for 45 minutes.

Christmas Cake


This recipe gives an eggless and alcohol-free twist to the classic boozy and delicious Christmas special plum cake. The most important part here is soaking your dry fruits and nuts in orange juice for 3-4 hours. To make the cake batter, mix milk, butter, vanilla essence, cinnamon and dried ginger powder, maida, powdered sugar, cocoa powder, baking powder and baking soda. Add caramelized sugar syrup and soaked dry fruits mix to the batter. Bake in an oven or a covered vessel with sand!

Mango Cheesecake


Mangoes are in season! So how could our list be complete without including a mango cake?! To make the crumb, powder digestive biscuits, mix them with butter and spread this mixture at the bottom of the mould and refrigerate. To make the filling, mix cream cheese, powdered sugar, whipped cream and mango puree. Layer thickly on top of the crumb. Give another layer of cream cheese and top off with thickened mango puree and fresh mango pieces. Let it set and serve!
